I went to a meditation retreat expecting to learn some lessons about mindfulness and came away with a whole new
motivation for cooking even healthier meals for myself and my family. Heather’s menus incorporated so many vegetables
and grains in new combinations that tasted so great and left me feeling satiated and happy. The recipes weren’t hard to follow and the “reward” for taking the extra time to chop fresh ingredients made all the difference. In fact the night I went home, I made the Coconut Carrot Soup for my family and they all loved it. It was also great to be reminded – and in some cases learn – of healthier swap outs to add flavor without unnecessary calories. I consider myself a seasoned cook but I definitely learned new lessons and was inspired by the new ideas that Heather brought to the table:-).
